Snackage: Quick and Dirty Chocolate Pudding

Not feeling making the Jello fat bombs today. Keto Boy was difficult during our school time today, and I just don't have the patience right now to futz with boiling the water and waiting hours and hours for it to set, so I went to the kitchen and concocted.

Quick and Dirty Chocolate Pudding (or mousse, if you wanna be technical)



1/3 cup cold heavy whipping cream (HWC)
1 tbsp sugar free hot cocoa mix

Put your bowl and beaters in the freezer for ten to fifteen minutes. When time is up, pull them out, pour in the cold cream, and go to town beating it. When it starts looking shiny add in your cocoa mix and beat until stiff. Eat. Or you can chill it and eat it later.

310 calories, 36g fat, 0 protein, approx. 3 net carbs depending on brand of ingredients used

1 serving, the yield of which is about the same as your average snack-pack-style pudding cup

Now, carbs. I use Organic Valley HWC and they insist that theirs is zero carbs per serving. However I will count 1/2 net carb per tbsp, which is average for HWC, just to be safe. At 1/3 cup that's about 6 tbsp so 3 net for the cream.

I also used Just Like Sugar Guilt Free Hot Cocoa Mix* which is made of organic cocoa powder and sweetened with inulin (chicory root fiber) and is almost pure fiber. It is 1 net carb for a 4 tbsp serving, so we've only added 1/4 net carb to our pudding by using this brand. Other brands will vary.

If you don't want to use hot cocoa mix for whatever reason it will also work with cocoa powder and erythritol, both to taste. You will have a much darker finished product than I did, which isn't a big deal.
