This evening I'm making a recipe that has been making the rounds on the keto boards. One Pot Cheesy Taco Skillet (found here: http://sweetcsdesigns.com/one-pot-cheesy-taco-skillet/) is working on the stove right now and I'm looking forward to the finished product.
I am one of those folks who almost never makes a recipe exactly as it's written. Either I don't like an ingredient and sub in something else that's acceptable, or I have to adjust ingredients to make it more keto-friendly. This recipe, with 1 large onion, 2 bell peppers, Rotel, and a whole packet of taco seasoning, was a bit carb-heavy, even though there is no breading, rice, or beans. So I Mandy-fied it to make it more suitable for my keto lifestyle. I reduced the onion to one small, and cut back the bell pepper to only one small as well. I also upped the fat content by keeping the drippings in the pan as it cooked instead of draining the meat.

I'm planning on having this atop a bed of chopped romaine, and may add in a tbsp of bacon drippings to my plate to up my own fat content a bit more. Gotta watch those macros!
