Dinner! Shepherd's Pie: down home comfort, Keto compatible



Shepherd's pie is one of those meals that is pure comfort; a savory meaty bottom topped with creamy mashed potatoes. My mom always put a good layer of cheese on top before she baked it, which added some extra oomf. This is also one of those meals a lot of people think they must completely swear off when they go keto.

Not so!

Here's how I altered the classic recipe to suit my keto needs:

1. Use xanthan gum instead of flour in the base. Xanthan gum, when used in the right quantity, is one of those magic keto ingredients. It's pure fiber, so it adds no blood sugar spiking carbs to the dish and it's also incredibly potent, meaning you only have to use a very small amount to get the same thickening result as several tablespoons of flour or corn starch. It is a bit pricy, but IMO, it's completely worth it. I paid around $15.00 for a small bag of the stuff, however I use so little of it at a time that I've been using the same bag for several years. Yes, I said years. I store my opened bag in an air-tight container in the freezer.

2. Go easy on the onions and other carb-y ingredients. My mom only ever put onion in it and so do I, but some folks may like theirs with chopped celery, carrot, or mushrooms. The key thing to remember here is that with a lot of these ingredients a little goes a long way for flavor and texture. 

3. Cauliflower! Cauliflower is one of those ingredients that works great as a substitute in some dishes, and not so well in others. My faux mac-and-cheese is based on cauliflower but I will tell you up front it's not really the same. It just tastes like cheesy cauliflower. Luckily this recipe is one in which the cauliflower works incredibly well. The trick to getting it super creamy- just like those mashed potatoes- is to throw well cooked and drained cauliflower into a good blender or food processor with salt, pepper, and butter. You can add cream if you like it.

4. Normally I would never, ever tell you to drain your meat. Fat is the heart and soul of keto and animal fats are the dietary equivalent of liquid gold. However, if you keep the fat from the meat you will have a very wet base, and unless you like it kinda soupy, I highly suggest you drain the meat.


Remember, this recipe is entirely customizable, so feel free to add any veggies you like (just keep the quantities lower for a low carb count) to the meat part, or sour cream and chives in the cauliflower mash. However you like it, do it!

I served this pile of deliciousness with roasted asparagus that I topped with a creamy garlic and cheese sauce. It was divine!


Keto-Friendly Shepherd's Pie

Ingredients

Meat Base:
2 lb ground meat (Beef, lamb, turkey, whatever you like. We like it beefy.)
1/2 c total chopped onion, or veggies of your choice
1 tsp minced garlic
1 tbsp butter
3/4 c beef broth 
1/4 tsp xanthan gum
Salt and pepper, to taste
Spices, as desired (Rosemary, thyme, etc. We like it without added spices, but to each his own)


Mashed Cauliflower Topping:
2 lb cauliflower (I used frozen)
4 tbsp butter
Salt and pepper, to taste
2 c shredded cheddar


Instructions:

1. Preheat the oven to 350 degrees F on convection or 400 degrees F regular. Get out a 2 -quart casserole dish.

2. Brown your meat over medium high heat and drain well. 

3. In the same pan melt butter over medium heat. Throw in onions (or other veggies) and garlic and sauté until onion begins to soften a bit. In the meantime, measure out your beef broth, sprinkle the xanthan gum over the top if it, and whisk it in until there are no clumps. 

4. Deglaze the pan with the broth mixture, being sure to scrape up any bits from the bottom. Throw your meat back into the pan for a few minutes until the liquid reduces and you have a mixture that is moist but not too wet. This takes around 3-5 minutes, but you be the judge of how saucy you like it.

5. Put the meat mixture evenly into the bottom of your baking dish.

6. Cook your cauliflower until soft; about 8-10 minutes if fresh and boiling, 6-7 minutes if microwaving from frozen. Drain well.

7. Working in batches if necessary, put the cooked cauliflower into your food processor or blender. Add in butter, salt and pepper to taste, and any other ingredients you like. Blend well, stopping to scrape down the sides once or twice, until the entire mixture is the consistency of well-mashed potatoes.

8. Spread the mashed cauliflower evenly over the top of the meat mixture, then sprinkle with the cheese. Bake for 20 minutes, or until cheese is melted. Let stand for five minutes before serving.

Serves 8-10

Assuming 8 servings, 455 calories, 37 g fat, 24 g protein, 7 g total carbohydrates, 3 g fiber, NET CARBS 4 g*

Breakfast- BPC, 1 cheddar keto waffle topped with 2 fried eggs
Lunch- 1 slice keto pumpkin bread with 1/2 tbsp butter, 2 slices deli ham smeared with 1/2 tsp each mustard and rolled up with 1 slice each cheddar, 10 green olives, 1/2 c cucumbers in vinegar
Dinner- Keto-fied Shepherd's Pie, 1/2 c roasted asparagus with a garlic cream sauce

Water count- 155.2 fl oz

Step count- 6,271

So my first full day of fitbit-ing went really well. I met my goal of 5,000 steps easily. I will likely go another week with that as my goal before adjusting upwards; the last thing I want to do is set my goal too high for my circumstances and be discouraged when it's unreachable. I'm really happy with the device and the app so far. The funniest part was when I hit my daily step goal. I felt a buzzing on my wrist, pushed the button on the device, and was rewarded with a big flashing "5000" like if won a prize on a game show or something, which made me laugh heartily. It also sent me an email congratulating me on making my goal for the day. Overall, silly as it seems, that kind of thing is extremely encouraging. 

I also like that I can connect with friends and family, and I've already got a goodly number of contacts. Being able to see how much my husband, for example, is walking every day makes movement kind of fun by turning it into a little friendly competition. I've got a long way to go to beat hubby, though. The man walks 5-7 miles at work every day, and that kind of movement is inherent in his particular profession so it's going to be quite the challenge considering that a good two hours of my day requires me to sit down with the kids and teach. I'll have to pick it up elsewhere, I guess.


Anyway, I must be off to have a go on ye olde exercise bike. Later I will try to post pics and the recipe for my dinner last night. I basically took my mom's old recipe for shepherd's pie and changed and some ingredients to make it keto-friendly, and it turned out great!

Keto Day 43, and BFC check-in

Morning!

Here was my day yesterday:

Breakfast- BPC, 1 cheddar keto waffles topped with 2 fried eggs
Lunch- 3 all beef hot dogs, 1 tbsp mustard, 1 tbsp low sugar ketchup, 1/2 c cucumbers in vinegar
Dinner- Sausage and Cheddar Beer soup, 1 piece faux-ccocia, 1/4 c almonds

Water count- 169 fl oz (I was thirsty!)

I got a fitbit! 

My husband has the one that attaches to his belt loop and has been wearing it a lot recently to track his activity. He's averaging 10,000 steps a day and says it helps him to be more aware of old sedentary habits he needs to break. This sounds like a great idea, so I bit the bullet and ordered a new Fitbit Charge HR. It's the fancy shmancy one that goes on your wrist like a watch. It monitors your steps, mileage, stairs climbed, and your heart rate. It also keeps time, has a silent alarm, and will monitor your sleep so you can see how restful or restless your sleep patterns are. The free fitbit app will also allow you to log food and water intake, the website proper has room to log weight and measurements, blood pressure, and blood sugar for those who need such monitoring. 

The device showed up in the mail yesterday in the late afternoon, so after opening the package and two hours charging it up I didn't get to wear it for long prior to bed. I did wear it through the evening hours, especially when I got dinner fixed and cleaned up, and knocked out some laundry. I was surprised at how much I actually walked. When I set up my app I picked a modest goal if 5,000 steps per day to begin. In only two or three hours I managed to knock out over 1600 steps just by doing my regular household chores, so we will see how active I actually am and whether or not I should up my daily goal. 

I was very pleasantly surprised to see my results from my first night's sleep, as they confirmed what I'd already suspected. I'm sleeping very fitfully with few disturbances, which would have been abnormal for me a month ago. I've always been a very light and restless sleeper, with frequent ups and down in the night. I'm also a mild insomniac, with regular intervals of difficulty falling asleep until the wee hours of the morning several times a week. All of that seems to have disappeared since I went keto and these readings seem to confirm that. Hooray for keto!


Anyway, I'm off to eat something for breakfast and then to do a core exercise routine. I'm up to four workouts a week without any adverse effects, so I'm going to add in a fifth today and see how it goes. Wish me luck!

Keto Day 42, and BFC check-in

I downloaded an app the other day that counts down days. You can pick days until something or days since something, so I went with days since I went keto. I'm now on Day 42. What's has struck me especially hard in the past few days is just how freeing this lifestyle is. Not only do I feel better than ever, I don't feel addicted to food. My life, my thoughts don't revolve around food. 

This has become especially apparent when I have conversations with others about their diets. There's always someone trying to lose weight, and when I sit down and listen to them talking about how hungry they are, or how exhausting all the planning for whatever method they're using is, of how much they **really, really want** such and such, it makes me appreciate this new way of living because, seriously, this is easy! Only now do I really understand what my friend Mary has been saying for a while about wanting this kind of life for other people. I want my friends and family to experience this type of freedom.

Anyway, I'm off to do some time on the exercise bike. KOKO, my babies!

Body Fat Challenge Check- In, Week 4

Morning!

We're headed into week 4 of the Ketovangelist Body Fat Challenge. You can see what Brian and Mary have been up to here:



My week has gone very well. I did skip out on posting yesterday, but never fear! It's not because I fell off the wagon. Yesterday, as everyone knows, was Father's Day. After we spent time in our Father's House at mass, we headed down to spend some time with my father-in-law. The kids got to swim in the pool, and we all hung out and got caught up. 

The one thing that is hard about visiting the in-laws is the food. While they thoroughly believe what they eat is healthy- and I'm not going to be a jerk and argue with them about it- not one stitch of what they make or keep on hand is keto-friendly. 

I prepared myself for the trip by stashing a quest bar, some beef jerky, and two packets of nuts in my bag, and am incredibly glad I did. After a long afternoon out in the sun, they set up the grilling station to cook dinner........and the only thing to come out of that which was suitable for keto consumption was one measly hot dog. So I had my hot dog with mustard, and then chowed down on a quest bar and some pistachios. Not exactly a stellar food experience.

By the time we got home all four of us were starving. I kept it down to 20 green olives and then zonked out on the couch. I did manage to drink 135.2 fl oz of water, so that's also a success.

As you can see, the scale finally caught up to my body fat loss from last week. I'm down another 1/4 of a percent in body fat and have lost a 1/2 inch off my waist since last week. This is great progress! I am feeling very confident that I can reach my body fat goal by September.

Body Fat Challenge Check-In

Morning!

Lunch- 1 double baconator with no bun, 1 small diet coke
Dinner- 1/2 c cucumbers salad (cukes marinated in vinegar), 1 serving cheddar keto-waffles topped with 2 hard fried eggs

Water count- 135.2 fl oz


Lunch was fast food for the first time in quite some time. The baconator is pretty perfect keto food so long as you throw out the bun. Wendy's is also pretty good about putting it in a little salad platter with a lid and throwing silverware in the bag. The one time I tried to eat at BK it was a train wreck and I had to go back to the counter three times to get everything I needed. 

Other than that I ate dinner at 9 pm last night, which is still very weird to me. I simply was not hungry, even at 7, and so I threw my waffles in the oven to keep warm and held off on frying my eggs until I really needed to eat. I will admit that even though I am not having trouble ignoring the clock for meal times during the day, the evening meal still gives me trouble. I'm not forcing myself to eat if I'm not hungry, but when I look up and see it's 8 or 9 pm and realize I still haven't had dinner yet there is a moment of panic before I relax a bit. But it's taken me a life time to form the eat-by-the-clock habits, so I don't expect to completely undo them overnight.

Mood still elevated and energy levels and well.

Yesterday went better as far as snacks. I wasn't very hungry again at lunch but I really wanted another cup of coffee, so I had the quest bar to make sure I had something solid and full of protein in my stomach in addition to my coffee. 

Aside from that I'm still feeling great!

Body Fat Challenge Check-In

Lunch- 1 quest bar, 10 green olives, 1 oz cheddar
Dinner- 2 slices pan fried ham, 1 serving faux mac-and-cheese
Snack: 1.5 oz package almonds

Water count- 118.3 fl oz

As you can see, I broke my no snacking streak yesterday. It was a pretty busy day and, aside from things being crazy in general, I wasn't particularly hungry for lunch until almost 4 pm, and then ate very light. Well, that seems to have caught up with me later in the evening, so I grabbed a packet of almonds. It is what it is.

Aside from my buddies over at Ketovangelist, I really like this guy that calls himself Butter Bob.


Bob is another one of those crazy keto success stories, and his advice is very similar to Mary and Brian at Ketovangelist. Now, his manner of speaking is a bit country- even he admits that up front- and he is repetetive. But honestly I think it's necessary sometimes to hear the same thing over and over and over again before it sinks in. I like to watch his videos because he explains the basics of why we get fat and sick and of how to counter it with keto in every single one of them. Watching his videos helps to reinforce in my mind why I'm doing this.

Anyway.

One of the cardinal keto rules that Bob and Mary and Brian all preach, and that supersedes most others is thus: if you're hungry eat, if you're not don't. If you're hungry your body is telling you it needs fuel. If you're not hungry your body is fine and you don't need any more fuel in the tank. I'm following that rule religiously right now and so even though my light lunch caused me to need a snack later, I think it's better to eat light when I'm only slightly hungry than to try and stuff myself so I don't eat later.

As I've said before getting into this habit has been hard because I've always been one to eat by the clock. Now that I seem to be getting into true keto-adaptation and I'm following my hunger instead of the clock I will have some days that are traditional breakfast lunch and dinner, and some days where I maybe just graze, and others where I may not eat much at all. As hard as it is to believe this is completely normal on keto. When you're full on all the fat and protein you've eaten it's hard to find the mental energy to fantasize about food, even when you're bored. 

Sounds crazy, right? It isn't, and it's working so well for me right now. I cannot emphasize enough how over the moon I am to finally feel free from food.

Faux Mac and Cheese



I'm a Southern lady, and so I grew up and spent all my life eating Southern staples. Cornbread, pinto beans, fried chicken, black-eyed peas, cornbread dressing, grits, greens, and baked macaroni and cheese. This is not the Kraft dinner out-of-a-box fake cheese powdered junk. This is home made cheese sauce poured over al dente noodles, topped with more cheese and baked to perfection. 

The best mac-and-cheese is all about the cheese sauce, and my family's recipe (passed down from my granny to my mom and then to me) begins with melting butter, whisking in flour, salt, and pepper, then adding whole milk, and whisking in shredded cheddar when the milk's at a simmer and just starting to thicken. Obviously there are some ingredients in that sauce that I can't have and remain keto, and that's before we even get to the noodles!

So, what's a Southern lady to do? Improvise y'all!

The easiest- also the most obvious and most commonly used- substitute for the noodles in keto and other gluten free cooking is cauliflower. I already came up with a very good version of my family recipe using cauliflower a few years back during my Atkins phase, but I ran across a recipe on All Day I Dream About Food that was very similar to what I already do, but took it to another level by adding in chopped bacon and scallions.


Ok, I'm game.

Now I have a few things to say up front. First, no matter how much I want faux mac-and-cheese to taste just like the real thing, it doesn't. I'm saying this about my own version as well, so this is not a defect of the linked recipe. Cauliflower can be masked well in a lot of things, but this is just not one of them. You can definitely taste the vegetable in the dish and for my children that's a deal breaker, so whenever I make faux mac I know I can just forget my children eating their portion. I always make them try it again, but as of right now it's a consistent fail. 

Second, I did not use English cheddar, because I'm lazy and didn't want to go to the store to get some. I did however use my personal favorite cheese, good old regular sharp cheddar. 

Third, aside from using regular cheddar, I followed this recipe exactly as written.

As to the recipe itself, as I said it is already very similar to what I normally do myself. I start with butter instead of bacon drippings, use one and a half cups of cream instead of just one cup, and usually skip the garlic. But otherwise it's almost exactly the same as what I concocted on my own. The thing that caught my eye was the bacon and scallions, which sounded like a nice addition to my fake mac. This is an assumption that proved correct.

I really liked how this came out. It was very tasty and the bacon actually stayed crunchy, which surprised me since it was slathered in cheese sauce and baked. I think that the next time I make fake mac I will probably include the bacon and scallions, and I will make sure to pick up some English cheddar to see if the taste difference is worth the difference in cost (cause that ain't cheap, yo!)

Again, I will reiterate that this doesn't taste like real mac-and-cheese, however it has so many of the same elements that it does satisfy the same craving sensors on my palate and in my brain. So if you're keto or low carb and looking for a good way to hit that spot without the carbs, I recommend giving this dish a try.

I got up and cooked a non-egg breakfast, then had a bunch of errands to run, then school. It's been a bit hectic. So here's where I ended up yesterday:

Breakfast- BPC, 3 eggs scrambled in 1/2 tbsp each butter and bacon drippings, 1 sausage patty
Lunch- 1 cup each Italian salad blend and spring mix, 1 tbsp grated Parmesan, 2 tbsp ranch, salt and pepper, 2 slices deli ham spread with 1/2 tsp each mustard and rolled up with 1 slice each cheddar and 4 dill pickle chips each
Dinner- leftover chicken and bacon chowder, 1 cup broccoli with 1 tbsp butter, salt and pepper

Water count- 135.2 fl oz

I apologize for being so late today, but I don't have much to talk about at the moment. I've got some things to do at home and then later must cook dinner. We're having baked ham and a
Faux Mac and cheese, which should be a family pleaser.

Body Fat Challenge Check-In

Morning!

Here's where I ended up yesterday:

Breakfast- BPC made with my monk coffee, 3 eggs scrambled in 1/2 tbsp each butter and bacon drippings, 1 sausage patty
Lunch- 3 Publix hot n spicy unbreaded wings, 10 green olives, 1 cup Italian blend salad mixed with 1 cup spring mix, 1 tbsp grated Parmesan cheese, 2 tbsp ranch
Dinner- 1 serving Chicken and Bacon Crockpot Chowder, 1 cup broccoli with 1 tbsp Kerrygold unsalted butter, plus salt and pepper to taste


Water count- 152.1 fl oz



Things I'm noticing right now:

My constant fatigue seems to have genuinely melted away within the last two weeks or so. I am not a morning person. At. All. And yet I've woken up at a relatively early hour every morning for the past week, on my own without any alarm, and am not groggy and have no sleepiness at what was my usual nap time. Not that I took a nap, mind you. It was just the time every day that the tiredness had built up so much that I was irritable and desperately in need of one.

I have read this is a sign of keto-adaptation, aka nutritional ketosis. 

I'm also continuing to do really well without snacks. I'm eating breakfast somewhere between 9:30 and 10 am, am satisfied until somewhere between 2:30 and 3:30 pm at which point I will make myself a good sized lunch, and a, not hungry again until some time close to 8 pm or after. This is all new to me. Previously I ate as soon as I awoke or else I was hangry, and I was pretty hungry again soon after although I did always try to make it to noon without a snack. Lunch was promptly at noon and I was hungry again in less than two hours, so I would snack between 2 and 3 pm. Dinner was promptly at 6 pm and I was starving, and usually shaking from it by that point, and I always had a snack later because I was hungry again.

So, as you can see, this is a big change in not only my behavior by also my physiological response, and is a huge improvement in my lifestyle. Hunger is not interfering with living. What a freeing feeling that is!

Trying out the Ruled.me Keto "Breakfast Sandwich" (cough, cough....mcgriddles...cough, hack, cough)

Ruled.me is probably my favorite site for keto recipes, ever. No joke, this guy can cook and he even got BBQ sauce right. That's a hard one to nail at home, even with sugar-laden ingredients. He did it and kept it keto. This is a minor miracle. Craig may be looking at canonization for it.

Anyway, one of his recipes caught my eye a while back and I've been dying to try it. This evening seems as good a time as any. So here's a link to it:



It's a keto McGriddle, y'all!

Overall this recipe was a hit with all but my son (aka, the pickiest child in the known universe). However I did have some issues.

1. I don't mind going all out on a recipe, but I just wasn't feeling getting out and washing my big food processor (ie, I'm lazy), so I winged it and just crushed the pork rinds in a plastic baggie. This was a mistake, I think. The pork rind pieces really should be powdered as directed. I didn't get any huge chunks but I think it hurt in being able to get the flavors to meld properly.

2. I made his suggested recipe for the maple syrup (which is seriously tasty, BTW). As I was cooking for four, I started with the directed 2 tbsp syrup per planned on serving, which equals a half cup. That's half the syrup recipe. When it got down to actually cooking the pancake bun part I stuck my finger in the batter and......Eesh! Pork rinds. Now some of that may be because I didn't get my rinds fine enough, but there was enough of the flavor there that it cannot be attributable to an issue of consistency. Or maybe it was just me, which is always possible. 

I ended up dumping the entire rest of the syrup (so, double what was called for) into the mixture which didn't add any carbs but did add calories and fat. I'm not personally worried about those things right now, but for the keto conscious person who is maybe stalled or an endurance athlete, or anyone else who for whatever reason needs to keep a close watch on their macros this could be a problem. 

And I don't plan on using any less than double the called for amount in the future because, while the finished product tasted good, it did take two to three bites for the initial pork rind flavor to fade from my palate and leave me with McGriddle goodness. Although individual tastes do vary, so start with what he recommends and work your way up from there by taste.

3. The author suggests you use an egg ring to get the right shape and consistency for your pancakes and eggs (and sausage if you don't buy pre-shaped). I do not own an egg ring and could not find one at my local grocer. This is not a fault of the recipe, but it does complicate matters a bit if you're looking to recreate exactly what he did. So once again I winged it and folded up some aluminum foil, lengthwise, until it was pretty sturdy, then bent it back around on itself to form a ring. 

The first issue here is that the pancake batter wanted to stick pretty badly to the foil, which should not be a problem using a real non-stick egg ring. It also didn't hold its form when I removed the ring to flip it, mainly because it didn't cook through evenly. By the end of the pancake batter I gave up and just made the rest into actual pancakes. This wasn't too big a deal because my son wouldn't eat the filling stuff anyway, and my daughter didn't care what it looked like before she woofed it down.

The other issue is when I went to cook the eggs they ran out underneath the foil because it didn't get a good seal between the bottom of the ring and the pan. I'm assuming with an actual egg ring made for the task this would not be a problem. So, nutshell: get an egg ring before you try this if you care at all about presentation.



So our pancake sandwiches were a bit messier than the picture perfect ones at the link above. But here is the finished product.


And in the end, regardless of appearance and missteps, it did taste like a McGriddle and was incredibly filling. We had all had a decent amount of veggies earlier that day and so I served these by themselves at dinner. Everyone was satisfied and my husband and daughter both insisted I put this recipe into our keeper file.

Body Fat Challenge Check-In, Week 3 Stats, Victories, and Progress Pics

Morning all!

Yesterday was Sunday, which is my day off cooking, so here's how I made out while eating out:

Breakfast- BPC, 1 sausage patty
Lunch- 1 Gator's Dockside side salad, no tomato, with blue cheese dressing, 1 Gator's Dockside 1/2 lb burger (no bun) with 1 slice cheddar, 2 slices bacon, about 2 tbsp shredded lettuce and 1 slice red onion, with zero carb hot sauce and mustard as condiments, 1 unsweetened tea with 1 lemon wedge and 1 packet Splenda
Dinner- 2 Publix hot n spicy unbreaded wings, 4 celery sticks, 1 tbsp ranch, 10 green olives, 1 square 85% chocolate

As you can see, I'm staying on track with not snacking. It's amazing how I'm just not hungry. I was hungry all the time pre-keto. Now, for the stats:

Last week I weighed 200 lb, had 38.9% body fat, and a 40.5" waist. 

As of this morning....


Weight- 200 lb (no change)
Body Fat %- 37.4% (-1.5)
Waist- 38.5" (-2)


Wow. I want to be disappointed that the scale didn't move, but how can I when I've lost 1.5% points in body fat AND two full inches off my waist? That's two NSVs. If this rate of fat loss continues I don't think I'm going to have a hard time reaching my goal of losing 3 % points of body fat by September. 

Awesome!


Now for my other victories.

1. We went to see Jurassic World yesterday and I knew I would probably be tempted by the popcorn and snacks if I didn't prepare myself. So I stashed a little snack baggie of wasabi almonds and a quest bar into my purse. But you know what?  I didn't even need it! I stuck to getting a bottle of water from concessions, and during the movie I didn't even pay attention to all the eating happening around me. And because I wasn't hungry I completely forgot I even had the snacks and just enjoyed my water and the movie.

2. I broke down and went shopping on Friday. This is a big deal for me because I'm a cheap you-know-what and I loathe buying clothes when there are perfectly fine ones in my closet. I'm the lady that wears literal holes in her clothes, and only then will I throw them out. 

But I'm at the point where my plus-sized pants are so baggy they're falling off. So down to Kohls I went, where I picked up a few things and headed to the dreaded dressing room. Know what happened? I don't fit in the plus-sized clothes anymore. I've dropped enough in fat and inches that I'm wearing regular ladies clothing. I'm down one full pants size and between one and two sizes down in tops.

That's a victory, my babies!

3. When I started keto a bit over a month ago, I looked like this:



Now, in my new and better-fitting clothes, I look like this: 




I am winning the battle with my body fat and it's all because of keto. And not only that, I am feeling better physically and am more awake than I have been in a long time. Gone is brain fog, perpetual sleepiness, and fatigue. I've got energy and I feel great! The proof is in the pudding, and this is proof that this WOL works and is living up to all the claims of good health and well-being.

If you aren't drinking Mystic Monks Coffee, you are seriously missing out

This coffee is lovingly roasted and ground by the Mystic Monks, a group of cloistered Carmelites out in Wyoming, and it is, by far, my favorite coffee in the universe. You need to go to the link immediately and buy some coffee. I'll wait:



This morning I opened my bag of Dark Chocolate Toffee coffee, and it smells exactly as advertised. It's very candy-bar-ish. Brewed  myself a cup, added my fats to make it bulletproof, and blended away. This is the creamy result:


My generic coffee gets a bit foamy, but man it does not look like that. And the taste is simply amazing. It is so smooth, and while there is definitely a chocolate and toffee taste there, it is understated enough that it does not overwhelm, nor is there any hint of artificial flavoring. The monks have, yet again, delivered a creamy cup of heaven.

Body Fat Challenge Check-In and no snacking progress

Morning!

Here's where I ended up yesterday:

Breakfast- BPC, 3 eggs scrambled in 1/2 tbsp each butter and bacon drippings, 2 slices of crispy bacon
Lunch- 1 serving home-made coleslaw, 10 green olives, 2 slices deli ham spread with 1/2 tsp each mustard and rolled with 1 slice each cheddar
Dinner- 1 "bagel" dog, 1/4 c roasted almonds, 1 square 85% chocolate

Water count- 135.2 fl oz


Day 2 of snacklessness went well. I'm trying to follow my friend Mary's advice and eat only when I'm hungry instead of by the clock. I ignored the clock completely when it came to myself yesterday, although I still tried to feed the kiddos at their normal times. I got up, hung out with my girlie, and didn't fix my breakfast and coffee until about 10 because I wasn't hungry. Same for lunch. We did our thing and then ran some errands, didn't get home until 2:30 and I wasn't hungry until after 3, so I didn't eat anything until then. Didn't have dinner until 9:30 at night because I wasn't hungry until then. That's a very substantial change in my routine and, believe it or not, it was kinda hard.

The crazy thing is we don't realize how much we rely on the clock to tell us when we're supposed to eat; not when we're hungry, which is a completely different thing. When we're hungry our bodies are telling us to stop and fill up the tank. But that's not what we do, is it? The social rule is thus: We are supposed to eat breakfast in the morning, lunch around noon, and dinner between six and eight in the evening. And so, literally like clockwork, you can go into any foodery in the nation at those times and find them busy, and largely empty otherwise. I worked in a restaurant in my late teens and early twenties, and I can verify from experience this is so.

Like practically everyone else, I've spent a lot of my life eating because "it's time" and not necessarily because my body needed fuel. I'm trying my darndest to break that habit because it's been detrimental to my health. Think about it: if we stop to eat lunch at noon simply because it is noon, and then proceed to stuff ourselves regardless of whether or not we're actually hungry, we are engaging in gluttony. Yes, I said gluttony. That's not a word people like hearing, I know, but it's accurate and the truth can often be unpleasant. So much of our food consumption in the US revolves around promoting a gluttonous mentality ("Have it your way," "Gotta Eat," sound familiar?) and the behavior that follows which, metaphysical implications aside, is incredibly unhealthy. No wonder we're now using terms like 'epidemic' in conjunction with discussions on obesity. 

Ah, but I'm ranting. I digress.

As for my mentality right now, I still feel really great. My attitude is remaining positive and I've got some more NSVs to share come Monday (hint: I went shopping).

Body Fat Challenge Check-In, and NSVs

Morning!

Here's where I was yesterday:

Breakfast- BPC, 3 eggs scrambled in 1/2 tbsp butter and 1/2 tbsp bacon drippings, 2 slices crisp bacon
Lunch- 2 slices deli ham spread with 1 tsp total mustard and rolled with 1 slice each cheddar, 1 serving home-made coleslaw
Dinner- 1 "bagel" dog with a smear of spicy brown mustard, 10 green olives, 4 celery sticks with 1 tbsp ranch, 1 slice bacon, 1 oz cheddar


Water count- 152.1 fl oz


I purposefully ate larger meals with more fat and protein and cut out snacks, and I'm pretty happy with how I felt. I was not hungry at all until it got to the next meal time. We will see if this results in more fat loss as I continue for a while. At least in the immediate term, eating more, but less frequently seems to be a potential solution to my exercise-driven hunger.


So. Victories.


1. I am not having any trouble sticking with my lifestyle changes thus far and am excited about my progress. Having and maintaining a positive attitude is the very first factor in accomplishing your goals, so I'm happy to report I seem to be off to a wonderful start. 

A good example of living by my lifestyle changes came today after music/cantor practice at church. There is a Krystal right across the street from my church. Right. Across. The. Street. The kids beeeeeegggggged me to swing through and get them slushies. That would be sabotage for me because there is no way I would be able to resist the call of a Cheese Krystal. It's also a bad choice for the kids. 

A month ago, I would have said, "Screw it!" and ended up in that drive-through. Today I took a long swig of my water and drove on by without even sweating it at all. This may sound crazy to anyone who doesn't have a weight problem and/or food issues (good Lord, my first world problems sound absurd even to me now), but it is a GINORMOUS accomplishment. Being able to turn down a favorite comfort food and it not even be a big thing at the time is a major step in the right direction.

Great success!

2. I am definitely losing inches. I am not weighing or measuring again until this coming Monday, but in the mean time I can tell I've lost fat simply because my clothes are beginning to get pretty loose. For example, yesterday I wore a shirt I could not get into a month ago. This top was skin tight the last time I tried it on but now it not only fits, I actually have quite a bit of room and it's borderline baggy in the stomach area.

Bagel Dogs


 

What you see here is what happens when you've planned on serving your meat with a mixed green salad, and you open the brand new container to find it mostly wilted and slimy. Boo.

For dinner this evening, I tried out a recipe for Everything "Bagel" Dogs (minus the everything, because kids). Recipe located here:


This one's been making the rounds lately and it would be nice to have something cushioning my hot dog upon occasion. One thing you will notice is that while I can do some seriously fancy cooking- and occasionally do!- most of what I make on a regular basis are keto-fied family favorites. I have two kids and they're.....let's charitably say picky. For example, my early-elementary-age daughter told me tonight she wants to try ketchup with her hot dog...for the first time. Ever. As in she's never had ketchup. Her three-years-older brother still refuses to try ketchup. They're that picky, most especially the boy.

So while I may be up for trying Chicken and Kale sweet n sour curry with Sriacha and ginger infused Zoodles (that's gotta be a recipe somewhere, right?!), my children aren't that adventurous and would be incredibly hungry if I fancified every day. 

Hot dogs are, unsurprisingly, one of the things I can get my kids to eat on a regular basis. Tacos, Mac and cheese, mashed potatoes, chicken nuggets and tenders, French fries, and bready breakfast foods are another. These are all easy weeknight family staples for the SAD* family. For the keto family these can be significantly difficult, which means I'm always excited to try out a new way to keto-fy the old standards. 

The basis of this recipe comes from the Fat Head movie blog's pizza dough** that's become something of a legend amongst the keto community. And for good reason. I've made it twice now and it was not only quick and easy, it tasted great and you can pick it up. That is a HUGE deal for keto pizza. The base recipe is mozzarella and cream cheese, melted then mixed with egg and almond flour to make a dough. This bagel dog recipe adds in some xanthan gum to add a bit of rise.

Now I made it exactly as directed and I have a quibble with the instructions for the bagel dough. To make the Fat Head pizza dough you melt your mozzarella and cream cheese and then mix in the dry almond flour and egg as separate ingredients. In this recipe the instructions say to mix the almond flour, egg, and xanthan gum together before kneading it into the cheese. This was disastrous. When adding them separately it took a little work to knead them into the cheese, but when I pre-mixed them together it clumped badly and I could not get it to incorporate very well. 

The other issue is that it was much stickier than the Fat Head dough, which I assume is due to the lesser incorporation of the dry ingredients. Consequently, I had difficulty rolling the balls of dough out into long strips. I ended up more or less pinching them gradually further down on each side. They also were a pain to roll around the hot dogs. I doubt my dogs will be anywhere near as pretty as the ones at the link simply because in many spots I had to just press the dough onto the dog because it would not roll.

I did not use the "everything" spices because my kids would have run for the hills. I did sprinkle it with coarse sea salt prior to baking and told them it was like having pretzel hot dogs, which they thought was neat.

The finished product was pretty tasty, and my son- of all people- really liked it. The outside was fairly bread-like, but the inside was more cheesy than bread. I believe this to be a result of the non-cheese ingredients not incorporating properly. Next time I make this I will mix it the Fat Head way and see if I have easier to handle results.

Not nearly as pretty as the pics at the link, but I suspect the "everything" spices cover up for a lot.

Overall, I rate this recipe as a keeper with tweaks.


* SAD is the acronym for the Standard American Diet. The SAD makes my body sad. :(


Body Fat Challenge Check-In

Morning!

Here's what yesterday was like:

Breakfast- BPC, 2 eggs scrambled in 1/2 tbsp butter and 1/2 tbsp bacon drippings
Lunch- 4 celery sticks, 1/4 cup Publix buffalo chicken dip
Dinner- 2 pieces home-made chicken strips, 1 serving home-made coleslaw
Snacks- 10 green olives, 1 oz cheddar, 2 slices crisp bacon, 1 double chocolate chunk Quest bar

Water count- 118.3 fl oz


As I said yesterday, since I began exercising my hunger level has gone up. I'm going to try something different the next couple of days and increase my food at meal times to try and cut out snacks. I know some folks put a lot of stock into the "5-6 small meals a day" theory of weight loss, but there has been a lot of research done on intermittent fasting, and the Eat-Stop-Eat methods of spacing your meals that the keto folks have utilized to great success. 

Nutshell version: eating smaller, but more frequent meals to keep your metabolism going can be detrimental for those with insulin resistance as well as those living Ketogenic lifestyles and trying to control their insulin release. Insulin promotes fat storage. Keeping insulin release to a minimum by going longer between meals instead of constantly feeding your digestive system and stimulating insulin release is a good way to discourage your body from storing more fat (and hopefully in ketosis it will be using it to fuel your activity instead). 

Today I'm going to do my best not to snack at all, and will be eating more protein and fat when I do sit down at the table. Since I hit 15 lb lost and have added in some light exercise, I re-calculated my macros and it seems my fat and protein needs in grams per day have increased with the increase in activity. Simply put, I need a little more fat and protein than what I've been getting, which explains why I'm suddenly hungry.

Anyway, we will see how this goes.
